Ingredients

  • 1 1/4 lb. halibut
  • 2 tsp. cooking oil
  • 3/4 c. soft bread crumbs
  • a little lemon juice
  • 2 Tbsp. grated Parmesan cheese
  • 1 Tbsp. tarragon
  • 1/2 tsp. paprika

Instructions

  1. Cut the halibut into 4 portions, pat dry, and brush with cooking oil.
  2. In a shallow dish, stir bread crumbs, Parmesan cheese, tarragon, paprika, and pepper.
  3. Dip each fish portion to coat both sides with the crumb mixture.
  4. Arrange the coated fish on a baking dish or pan.
  5. Sprinkle any remaining crumbs on top of the fish.
  6. Bake at 450°F (230°C) for 8 to 12 minutes or until the fish flakes easily.
  7. Do not turn the fish during baking.
