Ingredients

  • 2 lb. catfish fillets
  • 1 cup all-purpose flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon coarsely ground pepper
  • 1 egg
  • 1/4 cup milk
  • 18 round buttery crackers
  • 1/2 cup yellow cornmeal
  • vegetable oil
  • commercial tartar sauce

Instructions

  1. Slice the catfish fillets diagonally into 1-inch wide strips and set aside.
  2. Combine all-purpose flour, salt, and coarsely ground pepper in a shallow dish.
  3. In a separate bowl, beat the egg and milk together.
  4. Mix crushed buttery crackers and yellow cornmeal in another shallow dish.
  5. Dredge the catfish strips in the flour mixture, then dip in the egg mixture, and coat with the crumb mixture.
  6. Pour vegetable oil into a heavy skillet to a depth of 1 1/2 inches and heat to 375°F (medium-high heat).
  7. Fry the coated catfish strips in hot oil, a few at a time, for 3 to 5 minutes or until golden brown.
  8. Drain the fried catfish strips on paper towels.
  9. Serve immediately with commercial tartar sauce.
