Ingredients

  • 1 lb. boned and skinned chicken
  • 1/4 cup flour
  • 1 teaspoon dried parsley
  • 1/2 teaspoon poultry seasoning
  • 1/8 teaspoon salt
  • dash black pepper
  • 1 egg
  • 2 tablespoons milk
  • 30 whole wheat crackers

Instructions

  1. Rinse the chicken and pat dry. Cut into 1-inch pieces.
  2. In a plastic bag, combine flour, dried parsley, poultry seasoning, salt, and black pepper.
  3. Add chicken pieces to the seasoned flour mixture, a few at a time, then close the bag and shake to coat well.
  4. In a bowl, beat the egg and mix in the milk.
  5. Crush the whole wheat crackers finely.
  6. Dip the coated chicken pieces into the egg mixture, then roll in the crushed crackers to coat thoroughly.
  7. Either fry the chicken bits in hot oil until golden and cooked through, or bake in a preheated oven at 375°F (190°C) for about 20-25 minutes until crispy and cooked.
  8. Serve hot with your favorite dipping sauce.
