Crispy Chicken Salad combines tender diced chicken with crunchy vegetables and toasted almonds, tossed in a creamy mayonnaise dressing, perfect for a satisfying and flavorful meal.

Ingredients

  • 2 c. diced cooked chicken
  • 1 c. celery, diced
  • 1 tsp. onion, grated
  • 1 c. carrot, shredded
  • 1 small can shoestring potatoes
  • 1/4 tsp. prepared mustard
  • 1/2 c. toasted slivered almonds
  • 1/2 c. mayonnaise
  • salt and pepper to taste

Instructions

  1. Mix all of the ingredients, except the carrots, almonds, and shoestring potatoes.
  2. Add the carrots, almonds, and shoestring potatoes and toss immediately before serving.
  3. Serve immediately for maximum crunch.
