Ingredients

  • 4 qt. cucumbers, sliced thin
  • 1 cauliflower, broken into pieces
  • 3 cloves garlic
  • 1 qt. onions, sliced
  • 1 red pepper
  • 1 green pepper
  • 5 c. sugar
  • 1 1/2 tsp. celery seed
  • 3 c. vinegar
  • 2 Tbsp. mustard seed

Instructions

  1. Mix together the cucumbers, cauliflower, garlic, onions, and peppers.
  2. Cover the mixture with 1/3 cup pickling salt.
  3. Cover completely with ice cubes.
  4. Stand for 3 hours.
  5. Drain well.
  6. Bring the remaining ingredients (sugar, celery, vinegar, mustard seed) to a boil.
  7. Pack sterile jars with the pickles.
  8. Pour the hot liquid over the packed jars.
  9. Close the covers.
  10. Make small or pint jars for gift-giving.
  11. Store on the shelf for several months.
