Croatian Casserole

Instructions
- Heat oil; add beef and brown on all sides.
- Pour off fat and turn beef and drippings into large casserole.
- Peel onions and quarter; slice tomatoes and green pepper and add to meat. Sprinkle with salt and pepper.
- Cover and bake at 350° for 1 hour and 15 minutes.
- Add celery, eggplant and zucchini.
- Sprinkle with remaining salt and pepper.
- Cover and bake for 45 minutes longer. Makes 6 generous servings.
- Serve over rice, noodles, etc.
