Crumb Topped Asparagus features tender asparagus spears topped with a savory, crunchy breadcrumb and egg mixture, perfect for elegant dinners or sophisticated vegetable sides.

Ingredients

  • 4 to 5 slices dry white bread
  • 2 hard-boiled eggs
  • 1/2 cup butter or margarine
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon pepper

Instructions

  1. Break 1 slice of bread into 6 pieces and drop into a blender. Cover and run on low speed until bread is finely crumbed. Empty into a 1 cup measure.
  2. Repeat with remaining bread until you have 1 cup of bread crumbs; set aside.
  3. Put the hard-boiled eggs in the blender. Cover and run on low speed until finely chopped.
  4. Melt butter in a frypan; add bread crumbs, salt, pepper, and dry mustard. Cook over low heat, stirring constantly, until crumbs are golden brown.
  5. Stir in the chopped eggs.
  6. Serve hot over cooked asparagus. Makes 5 to 6 servings.
