- Combine sugar and yeast in a small bowl.
- Stir in warm water and let sit until the yeast begins to foam, about 5 to 10 minutes.
- In a separate bowl, warm the milk and beat the egg together.
- Mix the foamed yeast mixture with the milk and egg.
- Add the flour, salt, and melted butter to the wet ingredients and stir until smooth.
- Cover the batter and let it rise in a warm place until doubled in size, about 1 hour.
- Heat a griddle or non-stick pan over medium heat.
- Lightly grease crumpet rings or metal cookie cutters and place them on the griddle.
- Pour batter into the rings, filling them about halfway.
- Cook until the tops are set and holes form, about 5 minutes.
- Remove the rings, flip the crumpets, and cook for another 2-3 minutes until golden.
- Serve warm with butter and jam.
