Crumpets are soft, spongy bread with a delightful chewy texture and holes for absorbing butter and jam, perfect for breakfast or teatime.

Ingredients

  • 1 tsp. sugar
  • 1 pkg. dry active yeast
  • 1/4 c. warm water (110°F)
  • 1/2 c. lukewarm whole milk
  • 1 egg, beaten
  • 1 1/2 c. flour
  • 1/4 tsp. salt
  • 2 Tbsp. melted butter

Instructions

  1. Combine sugar and yeast in a small bowl.
  2. Stir in warm water and let sit until the yeast begins to foam, about 5 to 10 minutes.
  3. In a separate bowl, warm the milk and beat the egg together.
  4. Mix the foamed yeast mixture with the milk and egg.
  5. Add the flour, salt, and melted butter to the wet ingredients and stir until smooth.
  6. Cover the batter and let it rise in a warm place until doubled in size, about 1 hour.
  7. Heat a griddle or non-stick pan over medium heat.
  8. Lightly grease crumpet rings or metal cookie cutters and place them on the griddle.
  9. Pour batter into the rings, filling them about halfway.
  10. Cook until the tops are set and holes form, about 5 minutes.
  11. Remove the rings, flip the crumpets, and cook for another 2-3 minutes until golden.
  12. Serve warm with butter and jam.
