Ingredients

  • 1/2 c. butter
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 c. flour
  • 1/2 tsp. soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. oatmeal
  • 1 c. cornflakes
  • 1/2 c. coconut
  • 1/2 c. chopped pecans

Instructions

  1. Cream butter; add sugar and beat until fluffy.
  2. Add egg and vanilla; mix well.
  3. Combine flour, soda, baking powder and salt; gradually add to creamed mixture, beating well after each addition.
  4. Stir in oats, cornflakes, coconut and pecans.
  5. Shape into 1-inch balls and place 2 inches apart on a lightly greased cookie sheet.
  6. Bake at 350° for 10 to 12 minutes.
  7. Cool on racks.
