Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. milk
  • 1 pkg. creamy white frosting mix
  • 1 to 2 Tbsp. instant coffee
  • 1 1/2 c. toasted flaked coconut

Instructions

  1. In top of double boiler, melt butter in milk.
  2. Stir in frosting mix and instant coffee until smooth.
  3. Heat over rapidly boiling water for 5 minutes, stirring occasionally.
  4. Stir in coconut.
  5. Keeping mixture over hot water, drop by teaspoonfuls onto waxed paper.
  6. Cool until firm.

Tips & Substitutions

For a richer flavor, consider using espresso powder instead of instant coffee. If you prefer a less sweet treat, reduce the amount of frosting mix slightly. Ensure that the coconut is well-toasted for maximum crunchiness. You can also experiment by adding a pinch of sea salt to balance the sweetness. This recipe is versatile, making it a great base for variations like adding nuts or dried fruit.

Serving Suggestions

These delightful morsels are perfect for coffee breaks or as an accompaniment to afternoon tea. Consider serving them alongside a cup of espresso or a glass of cold milk. They also make a great addition to dessert platters, especially alongside treats like St. Nick Cookies No. 2("A Dutch Favorite At Christmastime") for a festive touch.

Storage & Reheating

Store leftover Crunchy Mocha Drops in an airtight container at room temperature for up to one week. If you want to extend their freshness, you can refrigerate them, but allow them to come to room temperature before serving for the best texture. Avoid freezing as it may alter the consistency of the frosting.

Frequently Asked Questions

Can I use a different type of frosting mix?

Yes, you can try using chocolate or vanilla frosting mixes for a different flavor profile. Just be mindful that this may alter the sweetness and texture of the final product, so adjust the amount of instant coffee accordingly to maintain a balanced taste.

How can I make these gluten-free?

To ensure that your Crunchy Mocha Drops are gluten-free, check that the frosting mix you use is certified gluten-free. Additionally, confirm that any other ingredients, like coconut, are free from cross-contamination with gluten-containing products.

What if I don't have a double boiler?

If you lack a double boiler, you can create a makeshift one by placing a heatproof bowl over a pot of simmering water. Just ensure that the bowl does not touch the water directly, allowing for gentle melting without burning the ingredients.
