Ingredients

  • 3 eggs
  • 1 1/2 c. grated zucchini
  • 1/2 c. cottage cheese
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. marjoram

Instructions

  1. Mix grated zucchini, egg yolks, cottage cheese, flour, salt, pepper, and marjoram together.
  2. Beat egg whites until stiff peaks form.
  3. Fold the beaten egg whites into the zucchini mixture gently.
  4. Fry spoonfuls of the mixture in a skillet until golden brown on both sides.
  5. If the mixture is too wet, add a little more flour to thicken.
