- Preheat oven to 375°F.
- Cook bacon until crisp; remove bacon from skillet and crumble. Drain fat, reserving 2 tablespoons.
- Saute onion and celery in the bacon fat until tender.
- Add beefaroni, crumbled bacon, cooked vegetables, and 1 cup of shredded cheese; mix well.
- Spoon mixture into a 2-quart casserole dish.
- Combine crushed corn chips and 1 cup of shredded cheese; sprinkle over the top of the casserole.
- Bake at 375°F for 25 minutes.
