Ingredients

  • 6 slices bacon
  • 1 cup chopped onions
  • 1.5 cups sliced celery
  • 2 cans (15 oz.) Chef Boyardee Beefaroni
  • 1 package (10 oz.) frozen mixed vegetables
  • 2 cups shredded American cheese
  • 1 cup crushed corn chips

Instructions

  1. Preheat oven to 375°F.
  2. Cook bacon until crisp; remove bacon from skillet and crumble. Drain fat, reserving 2 tablespoons.
  3. Saute onion and celery in the bacon fat until tender.
  4. Add beefaroni, crumbled bacon, cooked vegetables, and 1 cup of shredded cheese; mix well.
  5. Spoon mixture into a 2-quart casserole dish.
  6. Combine crushed corn chips and 1 cup of shredded cheese; sprinkle over the top of the casserole.
  7. Bake at 375°F for 25 minutes.
