Ingredients

  • 1 pkg. active dry yeast
  • 1/4 cup warm water
  • 3 cups sifted flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2/3 cup mashed potatoes
  • 1/3 cup melted butter or margarine
  • 1 cup shredded Gruyere cheese
  • 2 eggs
  • 1/4 cup scalded milk

Instructions

  1. Sprinkle yeast into warm water; stir until dissolved.
  2. Sift together flour, sugar, and salt.
  3. In a large bowl, combine potatoes, melted butter, shredded Gruyere cheese, eggs, and cooled milk.
  4. Beat until well blended.
  5. Add the yeast mixture and dry ingredients; mix thoroughly.
  6. Turn dough onto a well-floured surface.
  7. Knead about 8 minutes or until smooth and satiny.
  8. Place in a greased bowl and cover.
  9. Let rise in a warm place until doubled, about 1 hour.
  10. Punch down the dough.
  11. Knead gently on a floured surface for 2 minutes.
  12. Shape into a 20-inch roll.
  13. Place in a well-greased 9-inch ring mold and pinch edges to seal.
  14. Cover and let rise until almost doubled, about 30 minutes.
  15. Bake at 375°F (190°C) for 25 to 35 minutes.
