Ingredients

  • 4 cucumbers, peeled and seeded
  • 1 large onion, sliced into rounds
  • 1 can cream of celery soup
  • 1 can Italian soup or small can tomato sauce
  • 1 pound ground beef, browned and drained
  • 1/2 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and seed the cucumbers, then slice them into rounds.
  3. Slice the onion into rounds.
  4. In a skillet, brown the ground beef until fully cooked, then drain excess grease.
  5. In a mixing bowl, combine the cream of celery soup (or Italian soup or tomato sauce), cooked ground beef, and sliced onions.
  6. Layer the cucumber slices in a greased casserole dish.
  7. Pour the beef and soup mixture over the cucumbers.
  8. Sprinkle shredded cheese evenly over the top.
  9. Add buttered bread crumbs over the cheese layer.
  10. Bake uncovered for about 40 minutes or until bubbly and golden on top.
