Cucumber Lime Salsa

Ingredients

  • 1 large cucumber, diced
  • 1 teaspoon minced garlic
  • 1 medium jalapeno pepper, finely chopped
  • 3 green onions, sliced
  • 2 tablespoons fresh cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon lime zest, grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a large bowl, combine cucumber, garlic, jalapeno pepper, green onions, cilantro, olive oil, lime zest and pepper. Refrigerate for 2 hours before serving.
