Cucumber Salad I

A refreshing cucumber salad with thinly sliced cucumbers, a tangy dressing, and a hint of sweetness, perfect for light, cooling summer dishes or side salads.

Ingredients

  • 2 or 3 fresh cucumbers
  • salt
  • 1 Tbsp. olive oil
  • 1 Tbsp. vinegar
  • pepper to taste
  • pinch of sugar (optional)

Instructions

  1. In a bowl, arrange the sliced cucumbers, salting them in layers.
  2. Cover with a saucer and weigh down with something heavy.
  3. Let stand for several hours or until juices run out.
  4. Pour off cucumber juice, which will take most of the salt.
  5. Combine olive oil, vinegar, pepper, and a pinch of sugar (if using).
  6. Add the dressing to the cucumbers.
  7. Mix well and chill before serving.
