Crisp, tangy cucumber pickles with a hint of cinnamon and raisins, perfect for snacking or as a flavorful addition to meals, suited for pickle lovers and condiment enthusiasts.

Ingredients

  • 7 lb. cucumbers, sliced lengthwise
  • 2 gal. water
  • 2 c. lime
  • 2 qt. white vinegar
  • 1 tsp. salt
  • 1/3 box cloves
  • 1 c. raisins
  • 1 box cinnamon sticks
  • 5 lb. sugar

Instructions

  1. Soak cucumbers in lime water for 24 hours, then soak in clear water for 3 hours.
  2. Mix vinegar and sugar; tie spices and salt in cheesecloth and put in vinegar and sugar mixture.
  3. Bring the mixture to a boil.
  4. Put cucumbers in the mixture and let soak overnight.
  5. Boil the mixture for 30 minutes.
  6. Add raisins and boil for 5 more minutes.
  7. Pack the pickles into jars and seal.
  8. Chill before serving.
