Ingredients

  • 1 cup sliced mushrooms
  • 2 onions, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1 cup basmati rice, raw
  • 1/4 teaspoon salt
  • 1 1/2 cups chicken broth
  • 1 1/2 teaspoons curry powder

Instructions

  1. Spray a nonstick skillet with cooking spray and heat.
  2. Sauté mushrooms, onions, and peppers for about 5 minutes or until tender.
  3. Add rice, curry powder, salt, and chicken broth to the skillet.
  4. Bring to a boil.
  5. Reduce heat to simmer; cover and cook for 20 to 25 minutes until the rice is tender.
