Curried Onion Bake

Ingredients

  • 4 tablespoons butter
  • 2 cups coarsely crumbled soda crackers
  • 1 12 teaspoons curry powder
  • 14 cup vegetable broth
  • 2 large onions, coarsely chopped
  • 2 cups milk
  • 1 egg
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 34 cup shredded cheddar cheese
  • 1 teaspoon paprika

Instructions

  1. Melt 2 tablespoons of the butter in a medium microwave safe bowl.
  2. Add soda crackers, curry powder, and broth.
  3. Blend well.
  4. Set aside.
  5. In a large frying pan, melt remaining 2 tablespoons butter over medium heat.
  6. Add onions, cover, and cook, stirring occasionally until golden, 8 to 10 minutes.
  7. In another bowl, beat milk with egg, salt, and pepper until blended.
  8. Spread half of cracker mixture over bottom of a greased 8-inch square baking dish.
  9. Top with onions.
  10. Sprinkle on cheddar cheese.
  11. Gently pour milk mixture over all.
  12. Cover dish evenly with remaining crumbled cracker mixture.
  13. Sprinkle paprika over top.
  14. Bake 20 to 25 minutes at 325 degrees, until hot and bubbly.
