Ingredients

  • 1 lb. French bread loaf
  • 4 cups chicken, ham, or tuna salad
  • 8 oz. cream cheese softened
  • yellow food coloring
  • 2 ripe olive slices
  • 3 pimiento strips
  • 1 medium green pepper sliced into rings
  • 2 medium carrots shredded

Instructions

  1. Cut the top fourth off the loaf of French bread.
  2. Hollow out the top and bottom of the loaf, leaving a 1/2-inch shell. Save the removed bread for another use.
  3. Fill the shell with chicken, ham, or tuna salad.
  4. Replace the bread top on the filled shell.
  5. In a bowl, combine softened cream cheese and yellow food coloring; spread over the top and sides of the loaf.
  6. Place olive slices at one end of the loaf for the caterpillar's eyes.
  7. Arrange pimiento strips to form the caterpillar's mouth.
  8. Cut one pepper ring into two 3-inch pieces and insert above the eyes for antennae.
  9. Cut each remaining pepper ring in one place and place over the loaf a few inches apart, trimming ends if necessary.
  10. Sprinkle shredded carrots next to the pepper rings.
  11. Serve immediately.
