Ingredients

  • 1 pkg. cornbread stuffing mix
  • 1 1/2 cups chicken stock
  • 1 can cream of mushroom soup
  • 1 1/2 cups chopped onions
  • 1/4 cup mayonnaise
  • 1 stick margarine, melted
  • 3 1/2 cups cooked chicken, diced
  • 1 (4 oz.) can mushrooms and juice
  • 1 1/2 cups diced celery
  • 1/8 teaspoon cayenne pepper
  • salt and pepper to taste

Instructions

  1. Blend melted margarine and cornbread stuffing mix together.
  2. Line a greased 5 x 9-inch dish with half of the crumb mixture.
  3. In a separate bowl, combine chicken stock, cream of mushroom soup, chopped onions, mayonnaise, mushrooms with juice, diced cooked chicken, diced celery, cayenne pepper, salt, and pepper.
  4. Pour the mixture over the crumb layer in the dish.
  5. Top with the remaining half of the crumb mixture.
  6. Bake at 325°F (163°C) for 45 minutes until bubbly and golden.
