Ingredients

  • 12 lb. chuck, trimmed and cubed
  • 3 onions, chopped
  • 3 green peppers, chopped
  • 20 Serrano peppers
  • 10 cloves garlic, minced
  • 1 (No. 10) can tomatillos (including liquid)
  • 1/3 cup cumin
  • 3 Tbsp. coriander
  • 1 Tbsp. black pepper
  • 3 (60 oz.) cans tomato paste

Instructions

  1. Cook the chuck, onions, green peppers, Serrano peppers, and garlic until the meat turns gray.
  2. Add the remaining ingredients and cook for 3 to 4 hours.
  3. Add water if necessary to reach desired consistency.
  4. Let the chili cool before serving.
  5. Reheat and serve topped with chopped onions and shredded Cheddar cheese.
