Ingredients

  • 6 or more fish fillets
  • 1 cup chopped green onions
  • 1 cup sliced fresh mushrooms
  • 1/2 cup chopped celery
  • 1 1/2 cups white wine
  • white pepper
  • garlic salt
  • 1 sliced lemon with rind

Instructions

  1. Have Dr. Claude Smith go fishing and bring you some fish, all cleaned and filleted, in Baggies.
  2. Cut up onions, mushrooms, celery, and lemon, then sauté with olive oil.
  3. Add seasonings such as white pepper and garlic salt to the mixture, then pour in the white wine.
  4. Gently add the fish fillets and cook at medium-low temperature for about 15 minutes or until done.
  5. Serve hot, suitable with trout, catfish, or other fresh fish.
