Ingredients

  • 2 (7 1/2 oz.) cans minced clams
  • 6 Tbsp. bacon drippings
  • 2 large onions, chopped
  • 4 medium potatoes, diced
  • 8 c. boiling water
  • 2 (No. 2) cans whole tomatoes
  • 2 bay leaves
  • 4 c. minced carrots
  • 2 stalks celery, minced
  • 1 green pepper, minced
  • 1 tsp. thyme
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. caraway seed

Instructions

  1. In a kettle, fry bacon; remove bacon pieces and reserve.
  2. Cook onions in bacon drippings until straw colored.
  3. Add diced potatoes, boiling water, whole tomatoes, minced celery, carrots, green pepper, bay leaves, thyme, salt, and pepper.
  4. Cover and simmer over low heat for 30 minutes.
  5. Add caraway seed, minced clams, and clam liquid; simmer for another 5 minutes.
  6. Serve in a hot tureen and sprinkle the top with bits of crisp bacon.
