Ingredients

  • 1 kg. roasting chicken
  • 1 medium onion
  • 3 cloves garlic
  • 1 tsp. finely chopped fresh ginger

  • 1 1/2 Tbsp. ghee or oil
  • 1 tsp. ground turmeric
  • 1 1/2 tsp. garam masala
  • 1 1/2 tsp. salt
  • 1/2 tsp. chili powder
  • 1/2 cup yogurt
  • 2 ripe tomatoes
  • extra chopped mint or coriander leaves (to garnish)

Instructions

  1. Cut chicken into serving pieces or use chicken pieces of one kind: drumsticks, thighs or half breasts.
  2. Put into the container of an electric blender the onion, garlic, ginger, and fresh coriander or mint leaves.
  3. Blend to a smooth puree.
  4. Heat ghee or oil in a large pan and add the ground spice mixture, cooking until fragrant.
  5. Add the chicken pieces and brown on all sides.
  6. Stir in the yogurt and diced tomatoes, cooking until the chicken is cooked through and the sauce thickens.
  7. Garnish with chopped mint or coriander leaves before serving.
