Ingredients

  • 1 c. boiling water
  • 1 c. yellow cornmeal
  • 2 1/2 to 3 c. unbleached flour
  • 3 c. whole wheat flour
  • 1/2 c. All-Bran cereal
  • 1/2 c. toasted sesame seed
  • 2 tsp. salt
  • 2 pkg. active dry yeast
  • 1 c. milk
  • 1/4 c. oil
  • 1/4 c. molasses
  • 1/4 c. honey
  • 1/2 c. yogurt

Instructions

  1. Combine boiling water and cornmeal; set aside to cool slightly.
  2. In a large bowl, combine 1 1/2 cups unbleached flour, 1 cup whole wheat flour, All-Bran cereal, toasted sesame seed, salt, and active dry yeast. Blend well.
  3. In a saucepan, heat milk, oil, molasses, and honey until very warm.
  4. Add the warm liquid mixture, cornmeal mixture, and yogurt to the flour mixture.
  5. Blend well to form a batter.
  6. Stir in the remaining whole wheat flour until a stiff dough forms.
  7. Knead in 1 to 1 1/2 cups all-purpose flour for about 8 minutes until smooth and elastic.
  8. Place the dough in a greased bowl, cover loosely with plastic wrap and a towel.
  9. Let rise in a warm place until light and doubled in size, about 1 to 1 1/2 hours.
