Dan'S Roast Marinade
Ingredients
- 1 medium onion sliced in rings ⓘ
- 4 Tbsp. oil ⓘ
- 1 clove garlic, cup up ⓘ
- 1/2 c. thinly chopped celery ⓘ
- 3/4 c. catsup ⓘ
- 3/4 c. tomato based chili ⓘ
- 1/2 c. water ⓘ
- 2 Tbsp. Worcestershire sauce
- 2 Tbsp. wine vinegar ⓘ
- 2 Tbsp. lemon juice ⓘ
- 1 tsp. horseradish ⓘ
- 1 tsp. mustard ⓘ
- 1 tsp. hickory smoked salt
- few drops Tabasco sauce
- 2 Tbsp. brown sugar (or to taste) ⓘ
- 1/2 c. dry sherry ⓘ
Instructions
- Cook onion in oil a few minutes, add garlic, celery, chili sauce, catsup, water, Worcestershire sauce, vinegar, lemon juice, horseradish, mustard, smoked salt, Tabasco sauce, and sugar.
- Add sherry and simmer 10 minutes.
- Use London broil or beef roast of choice.
- Marinate overnight or longer.
- Bake in marinade until done at usual temperature.
