Ingredients

  • 1 cup white sugar or 1/2 cup white sugar and 1/2 cup brown sugar
  • 3/4 cup white lard
  • 2 cups oatmeal
  • 1/2 cup milk
  • 1/3 cup hot water
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 cup dates or raisins

Instructions

  1. Mix sugar, lard, oatmeal, and flour well in a bowl.
  2. Add hot water and baking soda to the mixture and stir until combined.
  3. Pour in 1/2 cup of milk and mix thoroughly.
  4. Spread three-quarters of the batter evenly in a greased baking pan.
  5. Boil dates or raisins with 1 tablespoon of sugar until soft.
  6. Spread the boiled date or raisin mixture over the batter in the pan.
  7. Top with salted peanuts and the remaining batter.
  8. Bake at 350°F (175°C) for 35 to 50 minutes until golden and cooked through.
