Date And Walnut Loaves

Ingredients

  • 1 cup pitted dates, chopped
  • 1 cup packed brown sugar
  • 4 tbsp (1/2 stick) butter, chopped
  • 2 cups self-rising flour
  • 1/2 tsp baking soda
  • 1/2 cup walnuts, chopped
  • 1 None egg, lightly beaten

Instructions

  1. Preheat the oven to 350°F. Lightly grease two 8 x 3 inch loaf pans.
  2. Combine dates, sugar, 1 cup water and butter in a small saucepan on low heat. Stir 1-2 mins without boiling, until sugar is dissolved. Bring to a boil on high heat. Transfer to a large bowl. Let stand 10 mins to cool slightly.
  3. Sift flour and soda into a medium bowl. Stir into date mixture with nuts and egg. Divide evenly among prepared pans. Cover tightly with 2 layers foil.
  4. Bake 25-30 mins. Cool in pan 10 mins. Remove from pan; cool completely on wire rack. Serve loaves sliced with butter and honey.
