Ingredients

  • 1 lb. dates, pitted
  • 2 eggs
  • 1 c. sugar
  • 1 stick oleo, melted
  • 1 tsp. vanilla
  • 3 c. Rice Krispies
  • 1 c. chopped nuts
  • coconut

Instructions

  1. Mix the pitted dates, eggs, sugar, melted oleo, and vanilla in the top of a double boiler and cook for 7 minutes, stirring often.
  2. Remove from heat and add the Rice Krispies, chopped nuts, and coconut; mix well.
  3. Roll the mixture into small balls and then roll in coconut to coat.
  4. Place on a tray and chill until firm before serving.

Tips & Substitutions

For an added depth of flavor, consider using flavored extracts like almond or coconut in place of vanilla. If you prefer a sweeter treat, increase the sugar slightly or use a mix of brown and white sugar. You can substitute the chopped nuts with seeds like sunflower or pumpkin for a nut-free version. If you want a chewier texture, reduce the cooking time in the double boiler by a minute.

Serving Suggestions

These Date Krispies make a delightful snack on their own or can be served as a sweet treat at gatherings. They pair beautifully with a cup of tea or coffee. For a festive presentation, serve them on a platter alongside other treats like Corn Flake Macaroons or as part of a dessert table for special occasions.

Storage & Reheating

Store leftover Date Krispies in an airtight container at room temperature for up to a week. If you prefer them chilled, keep them in the refrigerator. To reheat, let them sit at room temperature for a few minutes before serving, as they are best enjoyed slightly softened rather than cold.
