Ingredients

  • 1 1/2 cups chopped pitted dates
  • 2 tablespoons vegetable oil
  • 2 teaspoons baking soda
  • 1 cup boiling water
  • 2/3 cup brown sugar
  • 2 cups whole wheat flour
  • 1 egg, beaten

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine chopped pitted dates, vegetable oil, baking soda, and boiling water in a bowl.
  3. Let the mixture stand for 30 minutes.
  4. Add brown sugar, whole wheat flour, and beaten egg to the date mixture.
  5. Stir until just moistened.
  6. Pour the batter into three greased mini loaf pans measuring approximately 5 5/8 x 3 1/4 x 1 7/8 inches.
  7. Bake in the preheated oven for 40 to 45 minutes until a toothpick inserted into the center comes out clean.
