Ingredients

  • 1 Tbsp. butter
  • 1 c. sugar
  • 1 egg
  • 1 3/4 c. flour
  • 1/2 tsp. salt
  • 1 c. chopped dates
  • 1 c. hot water
  • 1 tsp. soda
  • 1 c. chopped nuts

Instructions

  1. Combine chopped dates, hot water, and soda in a small bowl.
  2. Set aside for about 5 minutes to allow the mixture to fizz and soften.
  3. In a mixing bowl, cream together butter and sugar.
  4. Add the egg and mix well.
  5. Stir in the flour and salt, mixing until just combined.
  6. Add the date mixture and chopped nuts to the batter, mixing thoroughly.
  7. Pour the batter into a greased loaf pan.
  8. Bake in a preheated oven at 350°F (175°C) for about 1 hour, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before removing from the pan and slicing.
