Ingredients

  • 1/2 cup margarine
  • 1 tablespoon liquid sweetener
  • 1 egg
  • 1 cup dates, finely chopped
  • 1 1/2 cups diabetic applesauce
  • 1 cup pecans, chopped
  • 2 cups flour
  • 2 teaspoons soda
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla

Instructions

  1. Cream the margarine in a mixing bowl.
  2. Add the egg, liquid sweetener, vanilla, and applesauce; beat together until well combined.
  3. Sift the flour, soda, and cinnamon together.
  4. Gradually add the dry ingredients to the wet mixture, mixing well.
  5. Stir in the chopped dates and chopped pecans.
  6. Beat the mixture for 2 minutes with an electric mixer.
  7. Pour the batter into a buttered loaf pan.
  8. Bake in a moderate oven at 350°F (175°C) for 1 hour, or until a toothpick inserted into the center comes out clean.
