Ingredients

  • 2 1/4 cups chopped dates
  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup chopped pecans or walnuts
  • 1 cup vegetable shortening
  • 2 cups brown sugar
  • 3 eggs
  • 4 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  1. Combine chopped dates, granulated sugar, and water in a saucepan. Cook over low heat until thick, about 10 minutes.
  2. Cool the mixture, then stir in chopped pecans or walnuts; set aside.
  3. Cream the vegetable shortening until smooth.
  4. Gradually add brown sugar and beat well.
  5. Add beaten eggs and mix thoroughly.
  6. Sift together flour, salt, and baking soda; add to the mixture and mix well.
  7. Chill the dough thoroughly.
  8. Divide the dough in half and roll each portion into a rectangle slightly less than 1/4 inch thick.
  9. Spread the date filling evenly over each rectangle to the edges.
  10. Roll up each rectangle from the long side like a jelly roll.
  11. Wrap the rolls in waxed paper and chill overnight.
