Ingredients

  • 1/2 cup butter or margarine
  • 8 oz. box pitted dates, chopped
  • 1 cup dark brown sugar, firmly packed
  • 1/2 cup flaked coconut
  • 1 1/2 cups crisp rice cereal
  • 1 cup chopped pecans
  • 1 cup vanilla extract
  • 1/2 cup sifted powdered sugar

Instructions

  1. Combine butter, chopped dates, brown sugar, and coconut in a saucepan.
  2. Bring to a boil, reduce heat, and simmer for 1 to 2 minutes, stirring constantly.
  3. Remove from heat; stir in crispy rice cereal, chopped pecans, and vanilla extract.
  4. Let the mixture cool until it is touchable.
  5. Shape the mixture into 1-inch balls.
  6. Roll the balls in sifted powdered sugar.
  7. Cool the coated balls on wire racks.
  8. Store in an airtight container.
