Ingredients

  • 3 eggs, separated
  • 3/4 cup sugar
  • 1 pound dates
  • 2 cups nuts
  • 2 tablespoons flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • whipped cream

Instructions

  1. Beat egg yolks until light.
  2. Add sugar and blend thoroughly.
  3. Cut dates and chop nuts.
  4. Combine flour and baking powder and sprinkle over dates.
  5. Add the date mixture along with nuts to the egg mixture.
  6. Fold in well-beaten egg whites.
  7. Add vanilla extract and mix well.
  8. Fill well-greased muffin tins or paper baking cups with the batter.
  9. Bake at 350°F (175°C) for 20 minutes.
  10. Serve warm or cold with whipped cream.
