Date Tea Cake

Ingredients

  • 1 cup butter
  • 1 cup firmly packed brown sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 2 cups sifted flour
  • 8 ounces diced dates or whole dates, cut up
  • powdered sugar

Instructions

  1. Cut off and discard a one-inch slice from the top of the fruit. Pencil a zigzag guideline around the top of the fruit.
  2. With a sharp knife, cut around the fruit following the line to form a zigzag edge. Using a spoon, scoop out the pulp.
  3. In a mixing bowl, cream together 1 cup butter and 1 cup firmly packed brown sugar until light and fluffy.
  4. Add 2 eggs one at a time, beating well after each addition.
  5. Stir in 1/2 teaspoon vanilla extract.
  6. Gradually fold in 2 cups sifted flour until just combined.
  7. Fold in the diced dates or whole dates that have been cut up.
  8. Pour the batter into a greased baking pan and bake at 350°F (175°C) for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool, then dust with powdered sugar before serving.
