Ingredients

  • 1 lb. ground beef
  • 1 (6 oz.) can tomato paste
  • 2 cups water
  • 1 can corn
  • 1 cup grated Cheddar cheese
  • 1 envelope chili mix
  • 1 can kidney beans
  • 1 package corn muffin mix

Instructions

  1. Brown the ground beef in a skillet.
  2. Combine the cooked beef with tomato paste, water, corn, grated Cheddar cheese, chili mix, and kidney beans.
  3. Pour the chili mixture into a baking dish.
  4. Bake at 400°F (200°C) for 20 minutes.
  5. Prepare the corn muffin mix according to package instructions.
  6. Spoon the corn muffin batter over the hot chili.
  7. Bake for 10 minutes, then turn the muffin over and bake for an additional 10 minutes.
