Del Bars are rich layered treats combining a crunchy graham cracker and coconut base with a creamy cheese topping, topped with chocolate and butter for a decadent snack.

Ingredients

  • 2 cups graham cracker crumbs
  • 2 cups fine coconut
  • 2 eggs
  • 2 sticks butter
  • 1/2 cup sugar
  • 8 tablespoons cocoa
  • 2 teaspoons vanilla
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • 1 1/2 sticks butter

Instructions

  1. Mix the graham cracker crumbs and coconut; set aside.
  2. Mix the eggs, 2 sticks of butter, sugar, cocoa, and vanilla together and cook over medium heat for 5 minutes.
  3. Add the cooked mixture to the crumb and coconut mixture and combine.
  4. Butter a large 10 x 15-inch cookie sheet and pat the crumb mixture into the pan.
  5. Mix the cream cheese and powdered sugar; beat well until smooth.
  6. Spread the cream cheese mixture over the crumb base.
  7. Spread melted butter and chocolate chips on top of the entire mixture.
  8. Chill until the mixture is hard, about 2-3 hours.
  9. Remove from refrigerator about 30 minutes before serving and cut into bars.
