Ingredients

  • 3 eggs
  • 1 2/3 cups buttermilk
  • 1 teaspoon soda
  • 1 1/2 cups sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons butter

Instructions

  1. Beat egg yolks well.
  2. Beat in buttermilk and soda.
  3. Sift together flour, baking powder, salt, and sugar, then add to the mixture.
  4. Stir to blend, but do not overmix.
  5. Stir in melted butter (shortening) and fold in beaten egg whites until stiff but not dry.
  6. Bake on a hot griddle until golden brown and cooked through.
