Ingredients

  • 1 box yellow cake mix (without pudding)
  • 1 can mandarin oranges and juice
  • 3 eggs
  • 3/4 cup oil
  • 1 small can crushed pineapple
  • 1 box instant lemon pudding
  • 8 oz. carton whipped cream

Instructions

  1. Mix together the cake mix, mandarin oranges with juice, eggs, and oil until well combined.
  2. Beat the mixture exceedingly well to incorporate air.
  3. Pour the batter into a greased and floured 9 x 13-inch baking pan.
  4. Bake at 350°F (175°C) for 30 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow the cake to cool completely.
  6. In a bowl, mix the crushed pineapple with the instant lemon pudding until thickened.
  7. Spread the pineapple and pudding mixture over the cooled cake.
  8. Top with whipped cream or whipped topping before serving.
