Ingredients

  • 1 box chocolate wafers
  • 1 cup butter or margarine
  • 2 cups sifted confectioners sugar
  • 4 (1 oz.) blocks unsweetened baking chocolate
  • 4 eggs
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon almond extract
  • whipped cream or topping
  • chopped nuts

Instructions

  1. Cream together butter and sifted confectioners sugar.
  2. Blend in melted unsweetened baking chocolate and add eggs.
  3. Beat well until mixture is smooth.
  4. Mix in peppermint extract and almond extract.
  5. Use foil cupcake liners to line a muffin tin.
  6. Fill each liner three-quarters full with the chocolate mixture.
  7. Place whipped cream on top of each filled cup.
  8. Sprinkle with chopped nuts and top with a halved maraschino cherry.
  9. Freeze the pies for 2 hours.
  10. Defrost for 10 to 15 minutes before serving.
