Ingredients

  • 1 lb. rainbow rotini
  • 1 (9 oz.) pkg. frozen artichokes, cooked and drained
  • 5 oz. pepperoni
  • 1 c. cauliflowerets
  • 1 c. fresh broccoli florets
  • 1 c. Monterey Jack cheese
  • 1 carrot, grated
  • 1 c. Italian dressing with cheese

Instructions

  1. Cook the rotini pasta according to package instructions; drain and let cool.
  2. Add all other ingredients to the pasta and toss well.
  3. Cover the salad and chill thoroughly in the refrigerator.
  4. Toss the salad again before serving.
