Ingredients

  • 1 cup raw, quick oatmeal
  • 1 1/2 cups boiling water
  • 1 stick butter
  • 1 cup dark brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Mix the oatmeal in boiling water and let stand while you cream the butter, brown sugar, and white sugar.
  2. Add well beaten eggs and vanilla to the creamed mixture.
  3. Sift together the flour, soda, cinnamon, and salt; set aside.
  4. Add the creamed mixture and oatmeal mixture; beat well.
  5. Add the flour mixture and mix well.
  6. Pour the batter into a 9 x 13-inch pan and bake at 350°F (175°C) for 25 to 30 minutes.
