Ingredients

  • 1 chicken hen
  • 1/2 to 1 lb. medium hot link sausage
  • 1 can cream of chicken soup

Instructions

  1. Season a chicken hen with salt, pepper, and red pepper if desired.
  2. Place the chicken in a large cooking pot and fill with water.
  3. Boil the chicken for 3 to 4 hours or until tender, adding more water as needed to keep the pot full.
  4. Cool the cooked chicken and remove it from the pot.
  5. Remove the skin and discard.
  6. Take the meat off the bones and tear into small pieces.
  7. Cook the sausage and cut into small pieces.
  8. Add the cream of chicken soup to the chicken stock.
