Ingredients

  • 4 split chicken breasts
  • 1 cup chopped onions
  • 2 tablespoons tomato paste
  • 2 cups canned tomatoes
  • 3 tablespoons vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 pound okra
  • salt
  • pepper
  • 1/2 teaspoon sugar

Instructions

  1. Cut the tops off the okra, making sure to only remove the tops.
  2. Wash the okra and place it in a bowl of cold water with vinegar.
  3. Let it sit for a couple of minutes, then drain.
  4. Rinse the okra with water, drain again, and pat dry.
  5. Brown the okra in olive oil and set aside.
  6. In a large skillet, heat butter and olive oil over medium heat.
  7. Add chopped onions and cook until translucent.
  8. Stir in tomato paste and cook for 2 minutes.
  9. Add canned tomatoes, vinegar, sugar, chicken bouillon granules, salt, and pepper.
  10. Bring to a simmer and cook for about 10 minutes to develop flavors.
  11. Add the browned okra to the skillet and cook for an additional 10 minutes.
