Ingredients

  • 6 eggs
  • 1/2 tsp. onion powder
  • 1/2 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3 cups frozen shredded hash brown potatoes
  • 1 cup (4 oz) shredded Swiss cheese
  • 1/2 cup diced fully cooked ham
  • 1/2 cup chopped green pepper
  • 1 medium tomato, thinly sliced

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, beat the eggs with onion powder, thyme, salt, and pepper.
  3. Stir in the shredded hash brown potatoes, Swiss cheese, diced ham, and chopped green pepper.
  4. Pour the mixture into a greased 9-inch pie plate.
  5. Bake for 40 to 45 minutes or until a knife inserted near the center comes out clean.
  6. Garnish with thinly sliced tomato.
