Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 6 eggs
  • 8 slices bacon, cooked and crumbled
  • salt and pepper to taste
  • 3 large pita breads
  • 2 tablespoons butter

Instructions

  1. In a large skillet, sauté chopped onion and green pepper in butter until tender.
  2. Beat eggs slightly; stir in crumbled bacon, salt, and pepper.
  3. Pour egg mixture into skillet and cook over low heat, gently lifting cooked portions and tilting pan to allow uncooked egg to flow to the bottom.
  4. Cook until eggs are firm but still moist, about 3 to 5 minutes.
  5. Cut pita breads in half and fill with the cooked egg mixture.
