Desert Rasmalai features soft, cheese-based balls infused with aromatic cardamom and saffron, topped with almonds—rich, fragrant, and perfect for festive occasions or special desserts.

Ingredients

  • 2 (15 oz.) cartons ricotta cheese
  • 1 1/2 cups sugar
  • 1/4 cup Carnation milk powder
  • 8 to 10 cardamoms
  • 2 tablespoons sliced almonds
  • 1 cup half and half or whipping cream
  • 1 pinch cooking camphor
  • 1 pinch saffron (optional)
  • 1 tablespoon rose water (optional)

Instructions

  1. Set aside 2 to 3 tablespoons of margarine.
  2. Crush the cardamom to a powder.
  3. Mix ricotta cheese, sugar, milk powder, and one crushed cardamom thoroughly.
  4. Spread the mixture in a 13 x 8 x 2-inch glass pan.
  5. Bake in a 350°F oven for 30 minutes.
  6. Remove from oven and sprinkle sliced almonds on top.
  7. Let cool for an hour before serving.
