Biryani
A flavorful Indian-style biryani featuring tender meat or chicken, aromatic spices, mint, and cilantro, layered with long-grain rice for a fragrant, satisfying meal.
Ingredients
- 1/2 lb meat or chicken, cut in pieces ⓘ
- 1/2 lb Bhasmathi rice (long grain rice) ⓘ
- 1/2 cup thick yogurt ⓘ
- 1 big onion, sliced ⓘ
- 6 teaspoons ghee or oil ⓘ
- 2 cinnamon sticks ⓘ
- 4 cloves
- 1 cardamom pod ⓘ
- 1 teaspoon ginger and garlic paste
- 2 green chillies
- 1/2 teaspoon chili powder ⓘ
- 1/2 bunch mint leaves ⓘ
Instructions
- Marinate meat or chicken in thick yogurt for 30 minutes.
- Fry cinnamon sticks, cloves, and cardamom in oil until fragrant.
- Add slit green chillies and sliced onions, and fry until onions are well cooked.
- Add mint, cilantro, ginger and garlic paste, and 1/2 teaspoon of chili powder; fry well.
- Add salt to taste and the marinated meat or chicken with yogurt; cook for 20 minutes with lid closed.
- Add rice and twice the amount of water; bring to a boil.
- Cook for 5 minutes on high flame in an open container.
- Reduce flame, cover, and cook for 5 minutes.
- Open after 20 minutes; the biryani is ready to serve.
