Ingredients

  • 1/2 lb meat or chicken, cut in pieces
  • 1/2 lb Bhasmathi rice (long grain rice)
  • 1/2 cup thick yogurt
  • 1 big onion, sliced
  • 6 teaspoons ghee or oil
  • 2 cinnamon sticks
  • 4 cloves
  • 1 cardamom pod
  • 1 teaspoon ginger and garlic paste
  • 2 green chillies
  • 1/2 teaspoon chili powder
  • 1/2 bunch mint leaves

Instructions

  1. Marinate meat or chicken in thick yogurt for 30 minutes.
  2. Fry cinnamon sticks, cloves, and cardamom in oil until fragrant.
  3. Add slit green chillies and sliced onions, and fry until onions are well cooked.
  4. Add mint, cilantro, ginger and garlic paste, and 1/2 teaspoon of chili powder; fry well.
  5. Add salt to taste and the marinated meat or chicken with yogurt; cook for 20 minutes with lid closed.
  6. Add rice and twice the amount of water; bring to a boil.
  7. Cook for 5 minutes on high flame in an open container.
  8. Reduce flame, cover, and cook for 5 minutes.
  9. Open after 20 minutes; the biryani is ready to serve.
